Grain Free Crepes

My first try at these crepes and I think it went well but I was not prepared for it to taste like an omelet.  Would still be great for burritos and enchiladas I think.  I got the recipe from Against All Grain.  Click here to print and view the recipe.

I did not have arrowroot powder so I used Tapioca Starch instead.  And it is so much cheaper price wise.  I used the same amount.

My oldest son gobbled the crepe right up plain.  But said, "a regular omelet is better".  Hahaha!  I think I want to tweak this somehow to make it less egg tasting, but we will see if I ever do.
